Elysian Eats: Raw Breakfast Bites

I’m certainly an advocate for a proper weekday breakfast, unrushed and homemade, though the truth is that it can be a luxury, even when you have your morning routine down to a science. For those days when duty calls a little earlier than usual, I still like to advocate for getting proper nourishment, even if it’s not the full-blown breakfast you dream of. It just requires a bit of forethought and creativity.

It was on one of these recent rushed mornings that I stopped into my local coffee shop en route to work and noticed a bag of healthy on-the-go offerings at the counter while checking out. I added one to my order, and took a bite once I was back behind the wheel. Pure bliss. It wasn’t long before I devoured a second, then a third, and made a vow to save the last one to dissect its recipe, perfect to have on hand for just these type of mornings. After a few trials, I landed on the ideal balance — a hint of peanut butter, a crunch of cacao nib, and a dash of sea salt. Now nestled in my freezer for the next up-and-at-em morning that strikes, these breakfast bites may just be my new saving grace.

Raw Breakfast Bites
Yields: 12 Servings

2 1/3 cups rolled oats
4 heaping tbsp. of creamy peanut butter
3 tbsp. of honey
4 tbsp. cacao nibs
3 tsp. chia seeds
1 tsp. vanilla extract
Pinch of salt
Flax seeds for rolling

Use a large mixing bowl to combine all ingredients, stirring with a wooden spoon or spatula until a sticky batter forms. With hands thoroughly washed, form mixture into 1″ diameter balls. Roll each ball through a plate of flax seeds to cover each side (just one layer is ideal), and set on a baking sheet or cutting board lined with parchment paper. Refrigerate for 2-3 hours and serve. Store in an airtight container in the refrigerator for up to 1 week, or in the freezer up to a month.
